Rhubarb


A great recipe for Rhubarb bread from my friend Amy Kulp:

(you don't have to like rhubarb to love this bread!)

-1 cup Sour Milk (1 Tbsp vinegar to 1 cup milk, let stand 5 minutes; or 1 cup of plain yogurt)

-3/4 cup brown sugar

-2/3 cup vege oil

-1 egg

-1/2 tsp almond extract

-1 cup white flour

-1 1/2 cups whole wheat flour

-1 1/2 tsp baking soda

-1 tsp salt

-1 1/2 cup rhubarb

-1/2 cup sugar (or less)

-1 tsp butter


1. Preheat oven to 325. Grease 2 loaf pans

2. for fruitier bread you can add up to 1/2 cup more rhubarb or apple
3. mix soured milk, brown sugar, oil, egg and almond extract. in separate bowl mix flour, soda, and salt. Add dry ingredients to wet. Add rhubarb and mix.

4. Pour into pans. Blend sugar and butter and sprinkle on top of batter

5. Bake 45-50 minutes




You can freeze the second loaf for a few months or share with a friend.
